I'm Cold Billy...Get Me My Shawl

COTW: Bill Curtis

 This weeks COTW is Chicago's own Bill Curtis. Not only is Bill a respected television journalist, producer, well-known former CBS News anchor and current host of A&E crime and news documentary shows, but he also LOVES TO EAT MEAT!

Bill has jumped on the grass-fed beef wagon and recently, with the help of other investors, started a cattle ranch called "Tallgrass Beef" that specializes in grass-fed beef. A while back Bill gathered some potential investors at one of Chicago's premier steakhouses, Harry Caray's. He brought out some samples of his beef and the rest is history!

He recently said, "I started Tallgrass Beef to raise cattle the way they were meant to be raised". You got to hand it to him. He loves meat so much, he's raising his own!

Baked Porterhouse with Mushroom Butter Sauce

 1/2 lb. fresh mushrooms
2 tbsp. butter
1/2 tsp. meat extract or beef concentrate
Salt and Pepper
1 tbsp. chopped chives
1 clove garlic
2 tbsp. minced onion
1/4 c. Worcestershire sauce
1 1/2 tbsp. salt
1/4 tsp. ground pepper
6 tbsp. butter
2 or 3 Porterhouse steaks
1/4 c. water
1 tbsp. butter


Have ready the following garnish and basting mixtures.

GARNISH: Trim stems of mushrooms to within 1/2" of caps. Wash and drain
mushrooms and slice 1/4" thick. Over high heat, melt 2 tablespoons
butter. When it sizzles, reduce heat to medium, add mushrooms and saute
until golden and soft. Stir meat extract or beef concentrate into pan
juices. Taste, season with salt and pepper and sprinkle with chopped
chives.

BASTING: Crush garlic and minced onion in a garlic press. Blend together garlic and onion, Worcestershire sauce, salt, freshly ground pepper and very soft butter (6 tablespoons).

STEAKS: Preheat oven to 550 degrees for 1/2 hour. Trim fat and tail from
Porterhouse steaks weighing 10 pounds altogether. Place steaks in
shallow baking pan and brush with 1/2 of basting mixture. Bake 12
minutes, then turn steaks and insert meat thermometer into one of them.
Brush second sides with rest of basting mixture. Bake to temperature
recommended for rare (130-140 degrees) or medium rare (160 degrees).

Remove steaks to heated serving platter. With a perforated spoon, heap
mushrooms on steaks, reserving juice. Place baking pan over high heat
on top of stove. De-glaze drippings with 1/4 cup hot water and add
mushroom juice and 1 tablespoon butter. Taste; correct seasoning and
pour sauce over steaks. Have plenty of French bread for dunking.

Serves 10 to 12

GOTW: Brinkman Gourmet Charcoal Smoker

 A couple of Sundays ago my brother-in-law Paul and myself were invited over to our brother-in-law Doug's house to watch our beloved Chicago Bears take on his beloved Detroit Lions. Our plan was to help Doug set up his kegerator, break in a smoker that he was given as a gift several years ago, drink beer, watch football and smoke some meat! All was accomplished very well.

Stephen Colbert's "Threat Down" #1: ZOMBIES!

 On the Colbert Report this week, the number one "Threat Down" to America's well being was ZOMBIES. That's right...zombies. Apparently college students around the country are playing a game called "zombie tag". Students armed with Nerf guns go after and defend themselves against other students acting like zombies. Stephen said during the report, "wake up college kids and stop playing fake zombies and get back to what you're supposed to be doing, playing fake lesbians and fake vegetarians"!

Well said Mr. Colbert! Well said.
